Jerk bear ribs

These grilled bear ribs are seasoned with a delicious blend of Caribbean spices and finished with a nice sticky BBQ sauce.

Ingredients:

(serves 4)
• 4 half racks of bear ribs
• 2 cups of your favourite BBQ sauce
• ½ bottle amber beer

Jerk marinade:
• 4 cloves garlic, minced
• 4 green onions, chopped
• 1 tbsp. fresh ginger, grated
• 6 sprigs fresh thyme, just leaves, no stem
• 1 tbsp. ground allspice
• ½ tsp. ground cinnamon
• ½ tsp. ground nutmeg
• 1 tbsp. coarse salt
• 1 tbsp. honey
• ¼ cup olive oil
• ¼ cup soy sauce
• ¼ cup orange juice
• ¼ cup cider vinegar

Directions

1. Place the jerk marinade ingredients in a food processor and blitz for 1 minute until all ingredients are well blended. Place bear ribs into a zip-lock bag and pour in jerk marinade. Shake well and refrigerate overnight.

2. Transfer marinated bear ribs to slow cooker, add beer and cook for 4 hours on high heat. Next, pre-heat BBQ to medium flame. Brush both sides of ribs generously with BBQ sauce and grill until nicely charred but not burnt.

3. Slice into individual ribs and serve hot.
