When I was younger, I worked at a fishing lodge on Pigeon Lake for a summer. This was my first experience with people catching a lot of panfish. It took a lot of work cleaning them to get the 1 1/2 pounds called for in this recipe, but it was worthwhile.
The sauce consists of dried oysters, soy sauce, and brine. Its main use is to enhance the flavour of stir-fries.
Hoisin sauce and Chinese five-spice powder can now be found in the Asian section of stores. Try them in this dish, and I'm sure they will find a way into many of your other dishes.
