maple pecan steelhead

This delightful flavour combination would work great with any orange-fleshed fish. Feel free to cook it on the smoker, in the oven, or even over a fire. This maple pecan steelhead dish goes great with a fresh garden salad and a glass of sauvignon blanc.

Ingredients

Serves 2

  • 2 steelhead fillets, 6 oz, boneless, skin on
  • 1 tsp coarse salt
  • ½ tsp cracked black peppercorn
  • 2 tbsp maple syrup
  • ¼ cup crushed pecans
  • 2 lemon wedges

Directions

1. Preheat smoker to 300˚F.

2. Season your trout fillet with salt and pepper.

3. Brush on maple syrup and top with pecans.

4. Spray your rack with non-stick spray. Place your fillet onto grill, skin side down.

6. Smoke for approximately 30-40 minutes, or until an internal temperature of 135˚F is reached.

7. Remove from smoker and serve with a wedge of citrus and a side of your choice.
