Quail are cool. Next you will need a nice pointing dog to keep the quail well exercised. Sounds like you have enough property for a nice 4 run kennel actually......
I’m suspicious of people who don't like dogs, but I trust a dog who doesn't like a person.

I want a couple baby goats and lambs next spring, turning 1 acre into a high density farm.

Geese are easy to raise - just have to fence the gardens well to keep them out. Muscovy ducks are great birds too.

Congratulations and best of luck. I've been married for 35 years and it's even better once you retire. Good luck with the chickens/Quail or whatever you end up raising.

pheasants are very easy to raise, raised them for many years myself, only get a couple months of egg laying though so hatches are minimal, so opted to utilize the space for chickens which can be hatched year round... ducks are messsssyyyyy... though pekins werent too bad and grow to market weight fast...
