Leeks Get Them Quick
I went out to my friends bush today to dig out Wild Leeks/ Ramps, the leaves are starting to yellow off so you better get them quick as they are hard to find once the leaves turn yellow and dry out and die. I dug out two grocery bags full of them, shared some with my neighbor in trade for a cold one , now I have lots of work to clean them up and freeze them.

Hopefully you keep your pants on while cleaning them.

Do tell, never heard of freezing them. We always pickle them.

They freeze well, we use zip lock bags and just take out what is needed at the time and back in the freezer they go.

I freeze mine in vacuum sealed bags. I put them in 100 gram packages and this seems to work fairly good.

The neighbor that I gave some leeks to, called this morning and said thanks , they on my advice , used some of the leaves chopped up finely and mixed with sour cream on their baked potatoes, said they were delicious.
I saved a lot of mine [ones that were still very green] soaked and rinsed in cold water, we use them as greens in salads and on sandwiches instead of lettuce, stir fried greens and many other ways.

I enjoy them many ways. Often grab a slice of bread toasted, a chunk of cheese, a few olives and a whole raw leek. Soups, stews, pasta, etc. Been eating them almost everyday for about a month, still have a week or two left fresh. The leaves may rot but the root will be OK.
You can also fry the leaves in butter and make "ramp spinach". When cooked they get very sweet...
Every year I get more and more addicted to them, nothing tastes like them and I grow 4 types of onions in my back yard, 400 total. Lol

Got mine done today. Saved a bunch for soup too. Going to try the vacuum sealer.
