    Post Blackened fish tacos

    Fish Tacos are a great quick meal - especially if you are a fan of Mexican style food.

    Ingredients:

    Large flour tortillas - 12"
    Walleye or Pike or Bass or ? - cut to 1"cubes, and ensure bonefree.
    Shredded Red Cabbage - for some crunch
    Limes
    Paul Prudhommes Redfish Magic Blackening seasoning
    tsp butter.
    Salsa
    Hot sauce , chipotle sauce,
    sour cream
    pickled jalepeno
    pickled onions
    guacamole

    melt butter into a med sized bowl, stir in fish cubes to coat lightly with butter, then place all cubes on a pan/tray and sprinkle liberally with Blackening seasoning.

    Place cubes in smoking hot dry cast iron pan and quickly cook on each side - 15 to 20 seconds per side, - varies a little with pan temp. seasoning amount to get a blackened coating.

    Heat flour tortillas individually in another cast iron or in bulk in an oven in foil.

    Add Red Cabbage , fish chunks, sprinkle with lime, and add toppings to taste - roll tortillas closed and enjoy with -----

    Tortilla chips , salsa , guacamole

    I do fish tacos when I ice some nice crappies in the winter. Thanks for sharing
